Curry Tofu

Tofu 1 block

Cube into thumb size dices

Broccoli 1 crown

Separate into smaller pieces 

Mushrooms 12 units

Quarter

Red Onion 1 unit

Thinly slice.

Sweet Pepper (Green, Red or Yellow) 1 unit

Slice into string shapes

Zucchini 1 unit

Dice into thumb size pieces

Coconut Milk 1.5 cups or 1 can

Curry Paste (Green, Red or Yellow) 2 table spoons

Sugar 3 table spoons

Salt 1 tea spoon

Water 1/2 cups

Zucchini 1 unit

- In a small bowl or a measure cup, combine the curry paste, salt, sugar with water. and stir to mix. 


- Place all the veggies and tofu cubes in a cooking pot, then pour the mixed sauce over them,


- Simmer the pot at medium heat and stir eventually until the veggies are slightly cooked, then turn off the heat.


- Do not cover the pot with lid in order to keep the veggies looked fresh or not over cooked.


- Ready to serve with rice, breads or noodles; and can be served up to four people.
